Our Horlick Brûlée Burnt Cheesecake combines the nostalgic malt flavour of Horlick with the richness of burnt cheesecake and the caramelised surface of a brûlée dessert. Horlick gives the cheesecake a warm, malty character that feels familiar without tasting overly sweet. The baked cheesecake develops the characteristic dark caramelisation around the exterior, while the interior remains rich and creamy.
The cake is finished in three main layers:
(a) the Horlick burnt cheesecake forms the base, carrying the malt flavour through the baked cheesecake itself.
(b) a generous layer of Horlick mascarpone cream sits over the cheesecake, creating a softer and lighter version of the same malty flavour.
(c) the surface is covered with sugar and torched until caramelised, producing the characteristic brûlée finish with its golden-brown colour and slightly crisp surface.
Each layer contributes a different texture. The cheesecake is dense and creamy, the mascarpone is softer and smoother, and the torched sugar adds a delicate caramelised shell on top. The slightly bitter notes created by the burnt sugar are particularly important because they balance the sweetness and dairy richness underneath. Combined with the natural toasted character of the baked cheesecake, the brûlée surface gives the whole cake a deeper flavour than a simple Horlick cheesecake.
The flavour sits between a malted cheesecake and a crème brûlée-inspired dessert. It is comforting and familiar, but the brûlée treatment makes it feel more intentional than simply adding malt powder to cheesecake.
