Our Dalgona Coffee Burnt Cheesecake is built around the contrast between creamy classic cheesecake and a deeper coffee-infused cheesecake layer. Rather than simply adding coffee cream on top of a plain cheesecake, part of the cheesecake mixture is blended with coffee and layered over the original cheesecake before both are baked together. This creates a clearly visible two-tone cross-section, with the pale classic cheesecake underneath and a darker coffee cheesecake layer above.
The cake is constructed in several distinct parts:
(a) the bottom section is our classic burnt cheesecake, providing the creamy and slightly caramelised foundation.
(b) a darker coffee cheesecake layer is baked directly together with the base, giving the coffee flavour more depth and allowing it to become part of the cheesecake rather than a separate topping.
(c) a layer of mascarpone cream sits above the baked cheesecake, softening the roasted coffee notes.
(d) the surface is finished with cocoa powder and a handmade dark chocolate coffee bean, adding mild bitterness and a final chocolate accent.
The result sits somewhere between a coffee cheesecake and the familiar flavour direction of tiramisu, but the eating experience remains distinctly that of a baked burnt cheesecake. Coffee naturally brings bitterness and roasted aroma, while cream cheese and mascarpone soften those stronger notes. The caramelised edges of the cheesecake echo the roasted character of coffee, while cocoa adds another darker layer without making the dessert overly chocolate-heavy. The contrast between the pale base and darker coffee section also makes the cross-section one of the most visually distinctive in the collection.
