What is Snow Skin Mooncake
Snow skin mooncake, also known as “bing pei” mooncake (冰皮月饼) in Chinese, is a modern twist on the traditional baked mooncake. Instead of a baked golden-brown crust, snow skin mooncakes are made with a soft, chewy outer layer crafted from glutinous rice flour. This gives them a delicate, mochi-like texture that’s enjoyed chilled for a refreshing bite.
Originating in Hong Kong in the 1980s, snow skin mooncakes have become a Mid-Autumn Festival favourite across Asia. They’re often filled with smooth lotus paste, creamy custard, or inventive flavours like matcha, chocolate, and fruit-infused fillings. Unlike traditional mooncakes, snow skin varieties are non-baked, which helps retain their soft, pastel-coloured appearance and fresh taste.

The outer layer of a snow skin mooncake is made from glutinous rice flour, often mixed with rice flour and wheat starch to create its signature soft, elastic texture. This dough is typically sweetened with sugar and combined with shortening or vegetable oil for smoothness.
Natural colouring from ingredients like
- matcha,
- fruit purée, or
- butterfly pea flower
is often used to give snow skin mooncakes their pastel, elegant appearance.
Inside, fillings vary from traditional options like lotus seed paste and red bean paste to modern flavours such as custard, chocolate ganache, green tea, durian, taro, or fruit-infused creams. Premium versions may include salted egg yolks for a savoury-sweet balance.
Snow skin mooncakes are soft, chewy, and tender — almost like chilled mochi. When served cold, the outer layer feels cool and refreshing, contrasting beautifully with the creamy, rich filling inside. This makes them lighter on the palate compared to dense, baked mooncakes.
